Hello + welcome to this tiny space on the internet! I created this blog (+ changed the name twice since) 14 years ago as a creative outlet from my career in the emergency room as a PA. After spending the past 7 (or so) years on social media outlets, I have decided to delete all of the ones associated with this blog and get back to the heart of blogging.
Have you heard of Prep Dish?! I recently discovered them this year through my podcast and it’s pretty genius. Allison Schaff, a registered dietician and nutritionist, pulls these meal plans together every week and delivers them to your inbox. Allison was a personal chef and a gourmet chef at a high end spa for a decade before diving into this venture to provide meals into homes around the globe. Here is how it works: At the beginning of the week you will receive an email with 4 different meal plan options: gluten free, paleo, low carb and super fast. I am going to try and convince her to add a protein loaded one 🙂
You download the PDF of the meal plan you want to follow for that week and it will show you the groceries needed for the week along with a step by step prepping process to get your meals all prepped for the entire week. I love that this allows the week to run smoothly, especially once school starts back up and it can be more difficult to get dinner on the table by a certain time.

Her quick and easy meals are my favorite because I don’t have a lot of time to get dinner on the table most nights. Now that the kids are getting older and more involved with extra-curricular activities, it’s tough! This meal was the ground turkey lo mein and it was really simple to throw together and delicious!
