Hello + welcome to this tiny space on the internet! I created this blog (+ changed the name twice since) 14 years ago as a creative outlet from my career in the emergency room as a PA. After spending the past 7 (or so) years on social media outlets, I have decided to delete all of the ones associated with this blog and get back to the heart of blogging.
Have you heard of Prep Dish?! I recently discovered them this year through my podcast and it’s pretty genius. Allison Schaff, a registered dietician and nutritionist, pulls these meal plans together every week and delivers them to your inbox. Allison was a personal chef and a gourmet chef at a high end spa for a decade before diving into this venture to provide meals into homes around the globe. Here is how it works: At the beginning of the week you will receive an email with 4 different meal plan options: gluten free, paleo, low carb, super fast and protein boost. I am really excited about the protein option!
You download the PDF of the meal plan you want to follow for that week and it will show you the groceries needed for the week along with a step by step prepping process to get your meals all prepped for the entire week. I love that this allows the week to run smoothly, especially once school starts back up and it can be more difficult to get dinner on the table by a certain time.

Her quick and easy meals are my favorite because I don’t have a lot of time to get dinner on the table most nights. Now that the kids are getting older and more involved with extra-curricular activities, it’s tough! This meal was the ground turkey lo mein and it was really simple to throw together and delicious!
